Pistachio and Bourbon Vanilla Madeleines

Soft and delicately flavoured, these madeleines combine the comforting sweetness of Bourbon vanilla with the rich intensity of pistachio. Their tender crumb contrasts beautifully with a smooth white chocolate and pistachio coating, creating an elegant yet indulgent treat, perfect for afternoon tea or a refined dessert.

 

Ingredients

  • 100 g flour
  • 100 g brown sugar
  • 100 g butter
  • 1 sachet baking powder
  • 2 eggs
  • 300 g milk
  • 0.5 g Bourbon vanilla seeds
  • 100 g white chocolate
  • 20 g coloured pistachio paste
 

Method

  1. Preheat the oven to 200°C.
  2. Melt the butter. Once lukewarm, infuse with the Bourbon vanilla seeds. In a bowl, whisk the brown sugar and eggs for about 3 minutes until light and airy. Add the sifted flour and baking powder, mix well, then incorporate the melted butter and milk. Stir until smooth.
  3. Fill the madeleine moulds three-quarters full. Bake for 10 minutes on a thoroughly preheated baking tray to achieve the characteristic madeleine hump.
  4. Allow to cool before carefully removing from the moulds.
  5. Melt the white chocolate using a bain-marie. Remove from the heat, add the pistachio paste and mix until smooth. Spread the melted chocolate into the madeleine moulds, then place one madeleine back into each cavity, pressing gently so the coating rises along the sides. Chill for at least 30 minutes.
  6. Unmould carefully and enjoy.
