Vanilla Ruby Cocktail - Rafa Delgado

An elegant creation inspired by Rafa Delgado’s vanilla menu. This ruby cocktail blends the freshness of pink grapefruit with the smoothness of Bourbon vanilla for a perfectly balanced aromatic profile.
 

Vanilla and Grapefruit Syrup

Ingredients:
  • 250 g water
  • 35 g Bourbon vanilla paste Eurovanille
  • 250 g white sugar
  • 10 g grated grapefruit peel
Instructions:
  1. Add the water, Bourbon vanilla paste and sugar to a pan.
  2. Bring to a boil and let the sugar dissolve.
  3. Add the grated pink grapefruit peel.
  4. Cover the pan and let it infuse for 10 minutes.
  5. Strain and leave to cool.
 

Cocktail

Ingredients:
  • 1 ½ jigger vodka
  • 1 ½ jigger pink grapefruit juice
  • ¼ jigger white vermouth
  • 1/6 jigger pasteurised egg white
  • ½ jigger vanilla extract and grapefruit

*Jigger measurement

Instructions:
  1. Fill a shaker with ice.
  2. Add the rest of the ingredients and shake.
  3. Strain into a glass that has been pre-cooled in ice.
  4. Decorate with a dried vanilla pod and grapefruit peel.
